chicken fettuccini alfredo

I never knew how easy making a recipe like this was. It is easy and so good!

2-3 chicken breasts cut into slices or chunks
2 cups heavy whipping cream
4-5 garlic cloves; peeled
2 tablespoons butter
3/4 grated parmesan cheese
white ground pepper
salt


cut up the chicken and season with pepper and salt

in a saucepan simmer together the cream and garlic for about 10 minutes

in another pan melt the butter

saute the chicken in the butter until white and no longer pink in the middle

pour the cream mixture into the pan with the chicken (remove the garlic cloves) and then add the parmesan cheese

add the cooked fettuccini noodles

mix together and let stand for about 5 minutes until thick. Enjoy!

Outrageous Cranberry-Walnut Oatmeal Cookies

My sister gave me a challenge and that was to find the recipe for these cookies from Jason's Deli. I found a version of it and of course I made them and mailed them to her (today actually so hopefully she likes them).

1 1/2 cups old fashioned oats (not quick cooking)
1/2 cup white whole wheat or all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons unsalted butter, at room temperature
1/2 cup dark brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/3 cup chopped toasted walnuts
1/3 cup dried cranberries

mix together flour, baking soda, baking powder, salt, and cinnamon

mix together butter, brown sugar and sugar

add egg, vanilla and the flour mixture

add cranberries

add toasted walnuts (I added more than the recipe called for)

bake for 12-15 minutes on 350 degrees (I baked for 13 minutes and they came out great)

Caramel Filled Apples

Lately I have been trying new snack ideas and I have heard of this before but I wanted to try it.

3-5 granny smith apples; washed
kraft caramels


core the apples (make sure all the seeds are out)

prepare the caramel as the package directs

when the caramel is done, fill the apples. chill until set

once set, cut up and enjoy!

Oven Baked Baked Beans

I love baked beans but they are always too watery. I decided to bake them (my sister had told me about doing this a while). They were amazing!

2 (28oz) cans baked beans
3/4 cup brown sugar
1 small onion; chopped
1 cup ketchup
3 tablespoons bacon grease
3-4 slices cooked bacon



chop onion

mix together baked beans, onion, ketchup, brown sugar, bacon and bacon grease

pour into a baking dish and bake at 300 degrees for 1 1/2 hour-2 hours or until bubbly and thick.

Hot Artichoke and Spinach Dip

Every time we have a get together my husband always asks me to make this. It is easy and delicious.

1 can artichokes; drained and chopped
1/4 cup romano cheese
1/4 cup parmesan cheese
1/4 cup mayonnaise
1 (8oz) package cream cheese; softened
1/2 cup frozen spinach; thawed
1 teaspoon dried basil
1/4 teaspoon garlic salt
1 cup mozzarella cheese
salt
pepper


Mix together cream cheese, mayonnaise, romano cheese, parmesan cheese, garlic salt, and basil

drain and chop artichokes

mix in cheese mixture

add the thawed spinach

pour into a baking dish and cover with mozzarella cheese

bake at 350 degrees for 25 minutes or until brown and bubbly. Serve with pita bread.

Honey-Barbecue Pork Chops

This is a recipe that I came up with myself on a whim. It is simple and delicious!!

2 cups sweet baby rays barbecue sauce
1/4 cup honey
salt
pepper
2 tablespoons canola oil


Pour barbecue sauce into a bowl

add honey

whisk together

heat canola oil in a skillet

season the pork chops and brown on each side in the skillet


 Pour the sauce over the pork chops. Cover and simmer for about 25 minutes on medium-low heat

Sauteed Corn

Traditionally I will make corn in a saucepan but my Dad made sauteed corn for me and I'm sold. 

1 tablespoons margarine
white pepper
garlic powder
garlic salt
1 1/2 cups sweet corn


 Melt the butter in a skillet and add the corn. Seasons and cook for about 10-15 minutes on medium heat until browned.
