Chocolate Cherry Mice

For the last few years I have made this. My Mom got the recipe years ago and it's always a hit for Halloween.

2 jars maraschino cherries with stems
1 bag semi sweet chocolate chips
1 bag slice almonds
1 jar red hot candies
hershey kisses


In a double boiler melt the chocolate chips


It doesn't take very long


You have to do this one by one. Dip a cherry into the chocolate; covering the whole cherry


place a hershey kiss on the cherry


slide 2 sliced almonds behind the hershey kiss for ears; after you finish all the mice place in the refrigerator for about 10 minutes to set.


To affix the eyes use a little bit of the chocolate


place it where the eyes go


add the red hots!


One all the eyes are on make sure you keep them refrigerated.

Cheese Potatoes

This recipe was also a personal favorite of mine growing up. 

4-5 potatoes
1/2 cup milk
10-12 slices American Cheese


peel and slice potatoes


layers the potatoes and cheese in a baking dish


use all the potatoes


add the milk


bake for 1 hour at 375 degrees

Joe's Buttermilk Chicken

This recipe is courtesy of my Dad. He made it for me while I was in Vegas.

garlic salt
salt
pepper
4 chicken thighs/legs (more or less depending on family size, you can also use chicken breasts)
1/2 gallon buttermilk


Place the chicken in a large dish; season with salt, pepper and garlic salt


pour entire container of buttermilk over chicken; refrigerate overnight


When you are ready to cook, season flour with more salt, pepper and garlic salt


heat oil in a large skillet


cover chicken in flour


fry until golden brown


See?!


Place in a baking dish and baking for 1 hour at 375 degrees.

Lisa's Lasagna

This next recipe is courtesy of my awesome sister, Lisa. We all know the traditional lasagna but she decided one day to change hers up.

You will need:

1 onion chopped
1 bag shredded mozzarella cheese
Pasta Sauce
1lb ground beef
1 box farfalle pasta
1 cup parmesan cheese
1 container small curd cottage cheese
italian seasoning
parsley


Mix together the cottage cheese and parmesan cheese


add the parsley and set aside.


in a skillet cook the onions until soft


add the ground beef and 2 tablespoons italian seasoning


add the pasta sauce


cook the noodles until done


in a baking dish add about 1/2 cup sauce


add some of the noodles (enough to cover)


add some of the cottage cheese mixture


add cheese and then keep layering until dish is full


bake at 375 degrees for about 35 minutes or until golden brown

Slow Cooker White Chicken Chili

I have never had white chicken chili before and I have always wanted to try it. I found a recipe but tweaked it to our tastes:

2 boneless skinless chicken breasts
1 onion; chopped
1 can white shoepeg corn; drained
2 cans great northern beans; drained
1 can swansons chicken broth
1 teaspoon cumin
1 teaspoon oregano
1 tablespoon Frank's Red Hot
2 tablespoons minced garlic
juice from 1 lime
2 tablespoons chopped fresh cilantro


chopped the onion


In a crock mix together the onion, cumin, oregano, 1/2 teaspoon salt, franks red hot, and garlic


add the chicken broth and chicken; cook on low heat for 5 hours


After 5 hours take the chicken out and shred


return the chicken to the crock pot, add the beans and corn


then add the lime juice and cilantro





cook for an additional 2 hours. enjoy!!!

Chicken Parmesan

I have always loved chicken parmesan but I have found that most recipes are pretty bland. So I decided to create my own:

2-4 boneless skinless chicken breasts (depending on your family size)
1 cup bread crumbs (I used italian)
2 tablespoons flour
1/4 cup parmesan cheese
1 tablespoon crushed red pepper
2 egg white; slightly beaten
thin spaghetti
1 cup mozzarella cheese
1 tablespoon olive oil
spaghetti sauce



Mix together the bread crumbs, parmesan cheese, flour, and crushed red pepper


place the chicken breasts in between 2 pieces of plastic wrap


flatten down to about a 1/4 inch thickness


Final product


place the egg white in a bowl


dip the chicken in the egg whites


coat with the bread crumbs


dip again in the egg whites


and again in the bread crumbs


pour olive oil into a skillet and place on medium heat


cook the chicken in the skillet for 3-4 minutes on each side


Place in a baking dish


pour approximately 1/4 cup of sauce onto each chicken breast


add 1/2 cup of cheese to the top of each chicken breast. Bake on 350 degrees for 20 minutes until the cheese is completely melted and slightly bubbly.


serve the chicken with cooked pasta
