Shredded Chicken and Rotel Tacos

Mexican food is always a hit in our house. This recipe is really easy and delicious!!

You will need:

2 boneless skinless chicken breasts
1 can of Rotel
Corn Tortillas
Refried Beans
Olives
Cheddar Cheese
and any other toppings you would like (my hubby has onions and sour cream as well)



To make it easy to shred I boil my chicken breasts until they are done


Prepare a skillet with approximately 1 1/2 cups of vegetable oil and another skillet with the can of rotel


Once the chicken is cooked, go ahead and shred it.


Mix the chicken in with the can of rotel and let it simmer on low-medium heat. The flavor of the rotel adds such a yummy jalapeƱo flavor to the chicken (my sister had told me about using the rotel, so thanks sis!)


To make the tacos shells, bring the oil to a slight boil (i usually sprinkle a little bit of flour into the oil to see if it will bubble, then I know it's ready) Place a tortilla in the oil, let sit for about 10 seconds.


Fold the tortilla over and let it get crispy, flip over to the the same to the other side.


Once complete you can assemble your tacos (I put the refried beans at the bottom of the tacos, yum!!!)!!
