Sweet Barbecue Pork Chops

I had a package of thick pork chops and I wanted a simple recipe. 

4-8 thick pork chops
2 tablespoons oil
1/2 cup chopped sweet onion
 1/2 cup packed brown sugar
1/2 cup barbecue sauce
1/2 cup ketchup
1/2 cup french dressing
1/2 cup honey


chop the onion

add brown sugar

add ketchup

add barbecue sauce

add french dressing

add honey

mix all the ingredients together

add the oil to a skillet

add the pork chops to the oil and cook for 3-5 minutes on each side (medium heat) until golden brown


add the mixture to the pan; bring to a boil, then cover and reduce heat. cook for 4-5 minutes or until temperature reaches 145 degrees

Cheesy Chicken Enchilada Soup

 This is a very simple and delicious recipe. I love it!

1 (10 oz) can enchilada sauce
2 (10 3/4 oz) cans cream of chicken soup
2 cups milk
1 cup chopped frozen southwestern chicken (thawed, or you can use fresh chicken)
1 cup cheddar cheese
3/4 cup crushed tortilla chips


chop the chicken

Add all of these ingredients to a pot except the chips

Mix all the ingredients together until hot and the cheese is completely melted.

garnish each individual bowl with crushed tortilla chips.

Mozzarella Stuffed Bacon Wrapped Chicken

This recipe is really easy and delicious! 

boneless skinless chicken breasts
bacon
mozzarella cheese (or you can use cheddar)
salt
pepper
crushed red pepper flakes


place the chicken between 2 pieces of plastic wrap

pound flat with a mallet

season one side with salt

pepper

crushed red pepper flakes

lay the bacon out on a plate (3 slices one way and 2 slices the other)

place the chicken on bacon

season with salt, pepper, red pepper flakes and add mozzarella cheese (as much as you want)

wrap the chicken in the bacon (fold the 2 slices over first and then the 3)

place on a greased baking sheet (or you can line it with foil)

bake at 400 degrees for 45 minutes (turn halfway through) then after the 45 minutes are up, turn the temperature up to 500 degrees to make the bacon crispy (make sure you watch it).

Homemade Pancake Batter

I have always wanted to make my own pancake batter. I finally did it and WOW it's amazing! I will never buy anything in a box again.

1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
3/4 teaspoon salt
1 tablespoon sugar (plus an additional 1/4 cup to be used later)
3 tablespoons melted butter
1 1/4 cup milk
1 egg
1 tablespoon vanilla


sift together the flour, baking powder, salt and 1 tablespoon sugar

create a well in the middle

Add milk

Egg

melted butter

mix together until smooth

add 1/4 cup sugar

Add vanilla

on a greased griddle or pan (on medium/high heat) add 1/4 cup batter for each pancake

cook on each side until golden brown

King Ranch Chicken Casserole

I am excited to kick off the new year with a delicious recipe given to me by my sister. It is really easy and absolutely delicious!!

1/4 cup margarine
1 medium onion; chopped
1 can (10 3/4 oz.) condensed cream of mushroom soup
1 can (10 3/4 oz.) condensed cream of chicken soup
1 can (10 oz.) ROTEL Diced Tomatoes & Green Chilis
2 cups cooked shredded chicken
12 corn tortillas; torn into bite-size pieces
2 cups shredded cheddar cheese
 (you can also add red or green peppers)

Boil the chicken

Melt the margarine in a large skillet

Add the onions and cook until tender, about 5 minutes

When the chicken is done, shred it and set aside

Add the soups and rotel to the onions

Add the chicken and mix together

In a large baking dish add a layer of the tortillas

Then add half of the chicken mixture and spread out

Add 1 cup of the cheese

Repeat the process once more and cook at 325 degrees for about 40 minutes or until brown and bubbly.
