King Ranch Chicken Casserole

I am excited to kick off the new year with a delicious recipe given to me by my sister. It is really easy and absolutely delicious!!

1/4 cup margarine
1 medium onion; chopped
1 can (10 3/4 oz.) condensed cream of mushroom soup
1 can (10 3/4 oz.) condensed cream of chicken soup
1 can (10 oz.) ROTEL Diced Tomatoes & Green Chilis
2 cups cooked shredded chicken
12 corn tortillas; torn into bite-size pieces
2 cups shredded cheddar cheese
 (you can also add red or green peppers)

Boil the chicken

Melt the margarine in a large skillet

Add the onions and cook until tender, about 5 minutes

When the chicken is done, shred it and set aside

Add the soups and rotel to the onions

Add the chicken and mix together

In a large baking dish add a layer of the tortillas

Then add half of the chicken mixture and spread out

Add 1 cup of the cheese

Repeat the process once more and cook at 325 degrees for about 40 minutes or until brown and bubbly.
