Herb Rubbed Pork Tenderloin with Roasted Red Potatoes

I love pork tenderloins so I'm always looking for easy recipes. This one is easy and amazing.

1lb pork tenderloin
10-12 red potatoes; quartered
2 tablespoons olive oil
1 1/2 teaspoons dried basil
1 teaspoon dried rosemary
1/4 teaspoon salt
1/2 teaspoon seasoned salt
lemon peel
2 gloves garlic

mix together all of the ingredients except the garlic and lemon peel

coat the tenderloin with the olive oil mixture; save some for the potatoes

slice the garlic gloves into 6 pieces, do the same with the lemon peel

cut 6 slices into the tenderloin and place a piece of garlic and lemon peel in each

clean and quarter the red potatoes; marinate the potatoes with the rest of the olive oil mixture

in a foil lined pan place the tenderloin in the middle with the potatoes around it.

bake at 425 degrees for 35 minutes or until the internal temperature is 160 degrees. Let rest for 5 minutes before slicing.

Enjoy!!
