Spicy Chicken and Pasta

I found a recipe similar to this from a friend but tweaked it to our tastes. Here is what I came up with and it's amazing!!


1 box fettuccine noodles
2-3 boneless skinless chicken breasts
Pepper Blend Seasoning
2-3 garlic cloves minced
1 red pepper; sliced
1 green pepper; sliced
1 1/2 cup fresh mushrooms; sliced
1 cup cherry tomatoes
1 small red onion; sliced
1 tbsp butter/margarine
1 cup fat free, low sodium chicken broth
1/2 cup fat free half & half
3 oz. reduced fat cream cheese
1 tbsp flour
1tbsp olive oil
1 tsp garlic powder
1/2 tsp pepper
salt to taste
freshly grated parmesan cheese


cup up the mushrooms and tomatoes

slice the peppers and onion

season the chicken breasts with the pepper blend seasoning

cut into chunks

cook the chicken until no longer pink inside and set aside

saute the peppers, onion, mushrooms and tomatoes in the olive oil until tender; set aside

 whisk together the butter and flour to create a roux

 add the chicken broth and more pepper blend seasoning. Let the mixture cook on medium-low heat for 2 -3 minutes then add the half & half

add the cream cheese and let melt completely

add the vegetables


 add the chicken

Finally, add the pasta and mix together

serve with grated parmesan cheese. Enjoy!
