This recipe is really easy, healthy and delicious!!!
4 teaspoons corn starch
2 tablespoons soy sauce
1 cup chicken broth
2-3 chicken breasts; cubed
1 bag mixed vegetable (I used one that had red peppers, water chestnuts, snap peas, broccoli and carrots)
1/2 onion; sliced
1/2 teaspoons red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove garlic; minced
2 tablespoons olive oil
white or brown rice
cube the chicken
in a bowl mix together the corn starch, soy sauce and chicken broth
In a pan add 1 tablespoon of the olive oil and cook chicken until done; remove from pan and set aside.
add the remaining olive oil and cook the vegetable until crisp and done
add the salt, pepper, red pepper flakes, and garlic
stir the broth mixture and add to the vegetables; stir for 2 minutes or until thick

add the chicken and cook for an additional 5 minutes
serve with white or brown rice! Enjoy!
I make something very similar, but add a little bit of ginger in for some added heat. Also works well with pork chops. :)
