Chocolate Covered Cheesecake Bites

This recipe has been a huge hit since the first time I made them. It is easy and delicious!!

You will need:

Crust:
1 cup graham cracker crumbs
1/2 cup melted butter

Filling: 
2 8 ounce packages of cream cheese (room temperature)
1/2 cup sugar
1/4 cup sour cream
2 eggs
1 teaspoon vanilla

Chocolate Coating:
2 cups semi sweet chocolate chips
4 tablespoons virgin coconut oil




Pre-heat your oven to 350 degrees. Line a pan with foil and lightly spray with nonstick spray


grind up the graham cracker


add the butter and mix together


press into the bottom of the pan and bake for 10 minutes. Once the crust is done take out and reduce temperature to 325 degrees


To make the filling: Beat the cream cheese and sugar together


add the eggs and sour cream


add vanilla; beat until smooth


Pour mixture in the pan and cook for 35-40 minutes; let cool completely and then refrigerate for at least 2 hours until solid


Microwave the chocolate chips and coconut oil for 1-2 minutes until smooth


Once cheesecake is cool cut into squares


dip into the chocolate and coat completely and place on a cookie sheet lined with parchment paper


Once all the bites are coated place into the refrigerator until set; then freeze overnight
