Ground Beef Enchiladas

Anyone that knows me knows that I love mexican food! Here is my yummy enchilada recipe.

You will need:

Oil
Enchilada Sauce (any brand will work)
Mexican Cheese and/or sharp cheddar
Olives
Onions
Corn Tortillas
Ground Beef



First you will need to cook the ground beef, once the meat is browned, drained the grease and place in a bowl.


Fill a skillet with roughly 1 cup of oil.


Take the enchilada sauce and pour into a medium size sauce pan. One that you will fit a corn tortilla.


I set out my ingredients in an assembly line to make things easier. You can obviously add or delete items.


Heat the oil and place a tortilla one at a time into the oil and fry for about 1 minute, constantly flipping it over.


It will bubble and that's good.


Then place the tortilla in the enchilada sauce and coat both sides.


Place tortilla in your baking dish and fill with whatever ingredients you like


Roll up!


Fill up your baking dish 


I pour the enchilada sauce over the enchiladas and then cover with more cheese.


Cook in a 350 degree oven for approximately 25 minutes or until cheese and sauce is bubbly.
