Chicken and Vegetable Stirfry

This recipe is really easy, healthy and delicious!!!

4 teaspoons corn starch
2 tablespoons soy sauce
1 cup chicken broth
2-3 chicken breasts; cubed
1 bag mixed vegetable (I used one that had red peppers, water chestnuts, snap peas, broccoli and carrots)
1/2 onion; sliced
1/2 teaspoons red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove garlic; minced
2 tablespoons olive oil
white or brown rice


cube the chicken

in a bowl mix together the corn starch, soy sauce and chicken broth

In a pan add 1 tablespoon of the olive oil and cook chicken until done; remove from pan and set aside.

add the remaining olive oil and cook the vegetable until crisp and done

add the salt, pepper, red pepper flakes, and garlic

stir the broth mixture and add to the vegetables; stir for 2 minutes or until thick

add the chicken and cook for an additional 5 minutes


serve with white or brown rice! Enjoy!

Homemade Nutri-Grain Bars

I have always wanted to make my own nutri-grain bars, I found an amazing recipe. Here ya go!

1 cup whole wheat flour
1 cup light brown sugar
1 cup butter or margarine; softened. I nuked it in the microwave for a few seconds
1 cup all purpose flour
1 1/2 cups old fashioned oats
1 teaspoon almond extract
1 cup strawberry jam (you can use any kind you like)


Mix together all the try ingredients

 Add the butter and almond extract

mix together until a crumbly texture

spread half of the mixture on a greased baking sheet (I lined the pan with foil and greased it, worked like a charm)

spread the jam on top

 Use the remaining mixture to cover

bake at 350 degrees for 20-25 minutes. I baked mine for 23 minutes.

let cool and then cut into squares. I wrapped each square in saran wrap and will freeze them.

Homemade Peppermint Patties

My husband loves peppermint patties and instead of buying them I figured I would try my hand at making them. They came out amazing!

1 can sweetened condensed milk
1 tablespoon peppermint extract
5 1/2 cups powdered sugar
3 cups semi sweet chocolate chips
3 tablespoon shortening


mix together 2 cups of the powdered sugar, peppermint extract and condensed milk. Keep adding 1/2 cup powdered at a time until all 5 1/2 cups are added.

 roll into balls and place on parchment lined cookie sheets (pat down so they are somewhat flat). Chill in the freezer for no more than 30 minutes.

melt the shortening and chocolate chips together until smooth

once done freezing place on a fork and coat with the chocolate and then place back on the cookie sheet. Place in refrigerator until set.

Pork Wellington

Kyle and I will watch the food network every now and then. We stumbled across this recipe from Alton Brown and I knew I had to make it.

1 whole egg
1 tablespoon water
1-ounce dried apple rings
1 whole pork tenderloin, approximately 1 pound
4 1/2 ounces thinly slice prosciutto ham
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 teaspoon chopped fresh thyme leaves
1 teaspoon all-purpose flour
1 sheet puff pastry, thawed completely
1 tablespoon whole-grain mustard


chop up the apple rings and set aside

in a small bowl combine the egg and water. lightly beat together and set aside

on parchment paper lay out the prosciutto so it slightly overlaps

cover with another piece of parchment and roll out with a rolling pin

the pork tenderloin down the middle into 2 equal halves

season the prosciutto with salt, pepper and thyme

lay one half of the tenderloin down

add the apples

cover with the other half of the tenderloin

using the parchment paper for help; roll the tenderloin so it's completely sealing by the prosciutto

on a lightly floured surface; roll out the puff pastry.  Spread the mustard in the center of pastry

set the tenderloin in the middle and roll up in the pastry, sealing it with the egg wash. pinch the ends closed.

place on a parchment lined baking sheet and brush it with the egg wash

bake for 25-30 minutes (or until internal temp is 140 degrees on 400 degrees. Once done cooking let rest on a cooling rack for 10 minutes


slice and enjoy!

The Best Oatmeal Raisin Cookies

I love these cookies, they aren't super sweet but they satisfy that craving. 

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup unsalted butter or margarine
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
3 cups oats
1 1/2 cups raisins


In a bowl combine the flour, salt, baking soda and baking powder; set aside

in a mixing bowl combine the butter, sugar, brown sugar, eggs and vanilla; beat until smooth

add the flour mixture

add the oats

then the raisins

drop the dough by a tablespoon full on a parchment line baking sheet. Bake at 350 degrees for 11-13 minutes.
