Homemade French Toast

I found this recipe a long time ago and it has been my go-to French Toast recipe ever since.

 4 eggs
1 cup milk
1 teaspoon vanilla
1 tablespoon brown sugar
1/4 cup flour
2 tablespoons cinnamon
4-6 slices bread (I use wheat)



In a large bowl add the eggs and beat lightly

 add vanilla and milk

add flour, cinnamon and brown sugar

on a heated griddle cook on both sides until golden brown about 3-4 minutes

Seared Spicy Fajitas

Kyle and I love mexican food, I found this recipe and knew that I had to try them. They are really easy and delicious.

1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons salt
1/2 teaspoon black pepper
1 pound skirt steak, cut crosswise into 2 equal pieces (if too large for skillet, cut into smaller pieces)
1 red bell pepper
1 onion
1 green pepper
2 tablespoons fresh lime juice
8 flour tortillas (6-inch)



thinly slice peppers and onions; season with salt and pepper

In a ziploc bag combine the coriander, cumin, salt and pepper. Add the steak and shake to coat


In a skillet on medium-high heat cook steak for 2-4 minutes per side for medium-rare


place the meat in foil

 fold up until tightly sealed

saute peppers and onion until tender; add 2 tablespoons of lime juice

place tortilla between 2 damp paper towels

 microwave for about 1 minutes until warm

assemble fajitas and top with your favorite toppings.

Black Forest Cupcakes

I friend of mine asked me if I could make Black Forest Cupcakes. She said she was nervous to make them and wanted to do it first haha. 

1 package Betty Crocker triple chocolate fudge cake mix
1 1/2 cans Betty Crocker whipped vanilla frosting
1 square unsweetened baking chocolate (grated)
1 can cherry pie filling
1 can diet coke



in a mixing bowl pour in the cake mix

add the diet coke

 mix until smooth

spoon the batter into a cupcake tin

add 1 tablespoon of cherry pie filling onto the top of each. Bake according to the package directions. I baked mine at 325 degrees for 22 minutes.

while baking use a grater and grate the chocolate

they will come out looking like this. 

after they have cooled frost them and sprinkle grated chocolate on top.

Crock Pot Balsamic Chicken

This is one of the easiest and yummiest recipes I have tried in a while.

4-6 boneless, skinless chicken breasts
2 14.5oz cans diced tomatoes
1 onion thinly sliced (not chopped)
4 garlic cloves, minced
1/2 cup balsamic vinegar
2 T olive oil
1 tsp each: dried oregano, basil, rosemary
1/2 tsp thyme
Black pepper and salt to taste
angel hair pasta


add olive oil to crock pot

add chicken and season with salt and pepper

layer onions on chicken and add all dry ingredients including garlic

add balsamic vinegar

add tomatoes; cook on high for 4 hours

cook pasta before serving

serve chicken on top of pasta

Homemade Brownies

I'm not a big fan of sweets but this recipe is absolutely amazing!

2 squares (1 oz. each) unsweetened chocolate
1/4 cup butter
1 cup sugar
2 eggs, beaten
1 cup all purpose flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoon vanilla
1 cup chopped nuts (optional)
1/4 cup semi-sweet chocolate chips (optional)


In a microwave safe bowl melt the chocolate and butter

in a large bowl mix together the dry ingredients

beat together 2 eggs

add all ingredients together; I also added the chocolate chips

spread in a greased pan and bake at 350 degrees for 30 minutes

cut into squares and enjoy!

chicken fettuccini alfredo

I never knew how easy making a recipe like this was. It is easy and so good!

2-3 chicken breasts cut into slices or chunks
2 cups heavy whipping cream
4-5 garlic cloves; peeled
2 tablespoons butter
3/4 grated parmesan cheese
white ground pepper
salt


cut up the chicken and season with pepper and salt

in a saucepan simmer together the cream and garlic for about 10 minutes

in another pan melt the butter

saute the chicken in the butter until white and no longer pink in the middle

pour the cream mixture into the pan with the chicken (remove the garlic cloves) and then add the parmesan cheese

add the cooked fettuccini noodles

mix together and let stand for about 5 minutes until thick. Enjoy!
